Nina blend – the joy of working with coffee

“Birds flying high you know how I feel. Sun in the sky, you know how I feel. Breeze driftin’ on by you know how I feel. It’s a new dawn, it’s a new day, it’s a new life for me and I’m feeling good.

I’m feeling good.”

…… This fabulous song is one of the many great pieces of music we play in our coffee roastery, inspiring us to do something great – let’s make a new coffee blend!

Step one – we have a look at the word map, imagine the unique characters of all those coffee growing regions and choose a number of exciting coffees to sample. When the samples arrive we roast them in a variety of ways to decide which roasting profile brings out the best from that coffee.

This blend has a surprisingly deep colour. To fully appreciate its wonderful reddish brown colour we made the coffee in a glass syphon.

Syphon makes a fantastic clear coffee, always perfect temperature and extraction. And it is really fun to watch the brewing process.

The best way to experience it …. simply make your coffee, put some Nina Simone on, sit back, get comfortable, relax and enjoy.

The next step is to roast all our single origin coffees. We then experiment with creating many different blends. This is one of the best things with working with coffee.

This process is more than just mixing flavour. Sometimes a very interesting, unique character emerges from the mixture of simple taste notes. We work on it until we are happy with something we consider worth drinking time and time again.

After we choose the ingredients of our new blend we put on our favourite music and keep on working to make the blend the best we can. This process is a labour of love for us. We tweak ratios and try the blend in all of our coffee making equipment to see how well it works in each individual one.

When we were testing our new blend with the Aeropress we got very excited. We knew we had a blend we wanted – a full-bodied coffee with a smooth finish and hints of honey like sweetness, bourbon, spice and toffee.

Nina Simone Feeling Good was playing in that moment and everything just clicked. It reminds us of fun times, it is a delightful morning and afternoon drink, or just as a dash of energy for any time for when the caffeine fix is needed.
